Product Description

CAS 87-69-4 L-Tartaric Acid Food And Beverage Industry L(+)-Tartaric Acid

L(+)-Tartaric acid is a naturally occurring organic acid that is commonly used in the food and beverage industry for various purposes. It is a white crystalline powder with a sour taste and is optically active, meaning it can rotate the plane of polarized light to the right.

Description:
L(+)-Tartaric acid, also known as dextrotartaric acid, has the chemical formula C₄H₆O₆. It occurs naturally in many fruits, particularly in grapes and bananas. L(+)-Tartaric acid is typically obtained from the byproducts of winemaking, such as grape pomace. It is available as a white crystalline powder or as colorless crystals.

Features:

  1. Acidic Properties: L(+)-Tartaric acid is a dicarboxylic acid, meaning it has two carboxylic acid groups. It is a relatively strong acid and can donate two protons (H+) in solution.
  2. Chirality and Optical Activity: L(+)-Tartaric acid is chiral, meaning it has non-superimposable mirror image forms. The L(+) form rotates the plane of polarized light to the right (dextrorotatory), while the D(-) form rotates it to the left (levorotatory). The L(+) form is the most commonly used isomer.
  3. Acidulants and pH Control: L(+)-Tartaric acid is used as an acidulant, providing a sour taste to foods and beverages. It is also used to adjust the pH of products and acts as a buffer in certain applications.
  4. Chelating Agent: L(+)-Tartaric acid has chelating properties, enabling it to bind with metal ions. It is used in some food and beverage products to stabilize colors, flavors, and other ingredients that are sensitive to oxidation or degradation caused by metal ions.
  5. Enantiomer and Salt Formation: L(+)-Tartaric acid can form salts with various minerals and metals. These salts, such as potassium bitartrate (cream of tartar), are used in baking and as acidulants in food and beverages.

Applications:

  1. Food and Beverage Industry: L(+)-Tartaric acid is widely used in the food and beverage industry as an acidulant, pH adjuster, and flavor enhancer. It is used in fruit juices, soft drinks, candies, jams, jellies, bakery products, gelatin desserts, and wine.
  2. Chemical: L(+)-Tartaric acid is used in some Chemical formulations as an excipient and pH adjuster. It can also be used as a chelating agent in certain medications.
  3. Cosmetics: L(+)-Tartaric acid is used in cosmetic formulations, including skincare products, hair care products, and personal care items, as an acidulant, pH adjuster, and chelating agent.
  4. Industrial Applications: L(+)-Tartaric acid finds applications in various industrial processes, including metal plating, textile dyeing, and the production of synthetic fibers and tanning agents.
