Sodium polyphosphate is an inorganic glassy salt produced by thermal/polyphosphate formation of sodium phosphate. It exists mainly as a mixture of linear polyphosphate chains (and sometimes cyclic structures depending on grade). It is widely used as a water-conditioning, sequestration, buffering, dispersing, and emulsifying agent in industrial and food-related processes.
